This deep chocolate souffle is the perfect dessert for a romantic evening, to share with the family, or if you’re just a chocolate lover looking for a quick fix. It’s not loaded with refined sugar, but no one's ever going to notice!


MAKES 2 SERVINGS/ TOTAL TIME 30 MINUTE


Paleo Chocolate Souffle Ingredients


2 tablespoons coconut oil plus more for greasing 

1 tablespoon unsweetened cocoa powder 

3 ounces chopped dark chocolate 1 teaspoon vanilla extract 1 tablespoon coconut milk 1 tablespoon honey 

2 eggs separated 

1/4 teaspoon sea salt 

1/4 teaspoon cream of tartar 


Serve with: coconut whipped cream or fresh berries     


Chocolate Souffle Preparation Instructions Step 1


METHOD STEP 1 Preheat oven to 375 degrees F. Lightly grease 2 ramekins with coconut oil and dust with cocoa powder. 


Set on a baking sheet and set aside. Put the chocolate and 2 tablespoons of coconut oil in a microwave-safe bowl and microwave in 15-second intervals until the chocolate is melted, stirring each time. 


Let the chocolate mixture cool to the touch and whisk in the vanilla, coconut milk, honey, and egg yolks. Put the egg whites in a mixing bowl with the salt and cream of tartar. Beat with a hand or stand mixer until you have stiff peaks.

Using a spatula, carefully fold the egg whites into the chocolate mixture. When they are just incorporated, divide the mixture between the ramekins. 


Bake for 14-15 minutes until the souffles are set up in the middle. Take out of the oven and serve with whipped cream and berries if desired

MAKES 12 SERVINGS/ TOTAL TIME 45 MINUTES INGREDIENTS


1/8 cup coconut oil melted 

1/4 cup honey 

1/2 cup pecans 

1/2 cup walnuts 

1/2 cup sliced almonds 

1/2 cup unsweetened coconut flakes 

1/2 cup sunflower seeds 

1/2 cup pumpkin seeds 3 tablespoons sesame seeds 3 tablespoons flax seeds 

1 tablespoon pumpkin pie spice or season to taste 

1/2 teaspoon sea salt 1/2 cup dried cranberries

Preheat oven to 350 degrees F. Combine the coconut oil and honey in a large bowl and whisk until combined. Add the nuts, seeds, pumpkin pie spice, and salt, and stir to coat well.

Spread the mixture on a parchment or foil-lined baking sheet. Bake for 30-40 minutes, until brown and fragrant. Remove from oven and stir in the cranberries. Let cool, then break up, or put in a food processor and pulse for a more traditional granola-like texture. This recipe makes about 4 cups. Store in an airtight container.

Paleo Berry Breakfast Bars Ingredients 


2 cups almond flour 2 tablespoons coconut oil melted 1/2 cup walnuts 1/2 cup unsweetened coconut 1/4 teaspoon sea salt 2 cups frozen berries of your choice 4 dates pitted and chopped 1 tablespoon lemon juice 1 teaspoon vanilla extract 1 tablespoon chia seeds     


Paleo Berry Breakfast Bars Preparation Step 1


Preheat oven to 350 degrees F. Combine the almond flour, coconut oil, walnuts, coconut, and sea salt in the bowl of a food processor. Pulse until finely chopped, with a crumb-like consistency.

Press half of the mixture into a square baking pan. Combine the berries, dates, lemon juice, vanilla, and chia seeds in a saucepan and bring to a simmer. 


Cook for 10 minutes, until the mixture, begins to thicken and bubble. Mash with a fork or potato masher and let cool. 


When cooled, spread over the prepared baking pan. 


Sprinkle the remaining nut mixture on top. Bake for 10-15 minutes, until top, is golden brown. Allow cooling before cutting into bars.

Paleo Almond Butter Cups


These easy snacks will satisfy any sweet tooth without guilt. Put it on a platter for a party or store it in the freezer for a quick pick-me-up on a busy day.

1/2 cup natural almond butter 

1 tablespoon coconut oil 

1 tablespoon honey 

1 cup chopped dark chocolate melted Coarse sea salt

Put the almond butter, coconut, oil, and honey in a food processor and process until smooth and creamy. Line a mini muffin tin with paper liners.

Coat the bottoms of the cups with the chocolate, fill them with almond butter mixture and add more chocolate. Put the tin in the freezer until firm, about an hour. Store in the freezer.

2 carrots diced 

1 cup chopped dates 

2 cups walnuts 

1 cup unsweetened coconut flakes 

1 teaspoon cinnamon 

2 tablespoons maple syrup 

1 teaspoon vanilla extract 

1 tablespoon almond butter 1/2 teaspoon sea salt     Paleo 


Carrot Cake Bite Preparation Step 1 


Put all of the ingredients in a food processor and pulse until well combined. Line a baking sheet with parchment paper.

Using a cookie scoop, scoop rounded balls onto the sheet pan. Roll into tight balls, and refrigerate for about an hour before serving. Store remaining balls in an airtight container in the fridge.

1 cup Almond flour 

1/4 cup Coconut flour 

1/4 cup Cocoa powder

3 Eggs 3/4 cup Pumpkin puree 

3 tablespoons Coconut oil melted 1 tablespoon Vanilla extract 

1/4 cup Raw honey 

1/4 cup Dried cranberries     


Cranberry Pumpkin Chocolate Paleo Muffins Preparation Step 1


Preheat oven to 350 degrees F. Spray a muffin tin with cooking spray or use coconut oil to grease the tin. Add the dry ingredients to a large bowl and sift gently. In a medium bowl, whisk the eggs, pumpkin puree, coconut oil, vanilla, and honey until combined.

Add to the flour mixture and stir. Fold in the cranberries. Divide the mixture between 10 muffin cups. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.
