Building on our last article where we highlight some very tasty Paleo meal ideas, we want to share another great dinner idea along with a great-tasting Paleo Drink idea. If you try to start a Paleo diet by ‘winging it’ or purchasing Paleo-friendly foods as you go without forethought, you run the risk of spending too much money while finding yourself in a hurry to finish off food before it expires, which wastes even more money.

PORK CUTLETS WITH BABY TRUSS TOMATOES

 

Total Preparation Time: 50 Minutes 

Serving Size: 6 Person

 

A Cajun Twist Makes These Pork Cutlet Meal Shine

 

With lean pork, eggplant, zucchini, and Roma tomatoes, this is a Paleo-friendly dinner option the family will love!

 

Take one baking tray, add ingredients, slide it into a warm oven, and let the flavors mingle as meat becomes golden and veggies turn crisp on the outside and tender on the inside.

 

 

INGREDIENTS

 

 

    • 6 pork cutlets 
    • 2 tablespoons Cajun seasoning 
    • 1 tablespoon extra virgin olive oil 
    • 1 large red onion, halved, cut into wedges 
    • 6 Lebanese eggplants, halved lengthways 
    • 3 zucchini, quartered lengthwise 
    • Extra Virgin Olive Oil 
    • 2 red apples, halved, cored, and cut into thick wedges 
    • 2 x 275g pkts baby Roma truss tomatoes  (The equivalent of 4-5 Roma Tomatoes)

 

 

Preparation

 

STEP 1

 

Preheat the oven to 200°C. Sprinkle both sides of the pork with the seasoning. Heat the oil in a large heavy-based flameproof roasting pan over medium heat. Cook the pork for 2 minutes on each side or until golden. Transfer to a plate.

 

STEP 2

 

Place the onion, eggplant, and zucchini in the pan. Lightly coat the pan with your Paleo-friendly oil choice and season with salt and pepper. Roast for 15 minutes or until the vegetables start to soften.

 

STEP 3

 

Arrange the pork, apple, and tomatoes in the pan with the vegetables. Roast, using a spoon to remove any excess liquid from the pan halfway through cooking, for a further 20 minutes.
